Apple Salad with Raspberry Dressing

Nothing says festive season like a beautiful red and green salad! This Apple Salad with Raspberry Dressing is a refreshing salad to brighten up the table this Christmas!

 Ingredients

• ½ cup roasted hazelnuts

• 100g fresh raspberries

• 2 tbsp red wine vinegar

• 2 tsp Dijon mustard

• 2 tsp honey

• ¼ cup olive oil

• Salt and pepper, to taste

• 3 Granny Smith apples, thinly sliced

• 120g rocket leaves

• 100g goat's cheese, crumbled

Method

• In a small bowl, mash half of the raspberries with a fork.

• Next, add the vinegar, mustard, honey, and olive oil. Whisk to combine. Taste and season generously with salt and pepper.

• To serve, arrange the rocket, apple slices, and remaining raspberries on a large platter. Sprinkle with the roasted hazelnuts and goat’s cheese, then drizzle over the raspberry dressing.
