Banana Chocolate Chip Muffins
A match made in heaven! Bananas and chocolate..you can’t go wrong!
Ingredients
- 2 cups self-raising flour 
- 1/2 cup caster sugar 
- 1/2 cup milk 
- 2 eggs 
- 60g butter, melted 
- 2 ripe bananas, mashed 
- 1 banana thinly sliced for decoration on top 
- 1 cup chocolate chips 
- Icing sugar to dust 
Method
- Preheat your oven to 200C or 180C fan-forced. Grease and line a muffin tray with paper muffin cases. 
- Melt butter in a small heat-proof bowl or cup in the microwave for 30 seconds. Set aside to cool slightly. 
- Sift flour into a mixing bowl and stir in sugar. Make a well in the center of the dry ingredients for the wet ingredients. 
- Beat the egg in a cup and add to the dry ingredients along with milk and butter along with the mashed banana. Using a wooden spoon, gently fold the ingredients until just combined. Stir in chocolate chips. Don't stir too much or the muffins will be tough. 
- Spoon the mixture evenly into the muffin cases. Tip** use two spoons to spoon mixture into cases, using the second spoon to scrape mixture off the other spoon. 
- Bake for 20 minutes or until center is cooked thoroughly. Use a knife to check and when it comes out clean they are done. 
- Set aside muffins onto a wire rack to cool for 3 minutes and enjoy!
