Carrot Cake Cookies
Nothing like a little baking to start the weekend right! These Carrot Cake Cookies are soft, chewy, and delish!
Ingredients:
- 1 cup rolled oats 
- 1 cup almond meal 
- ¾ cup sugar 
- ½ cup plain flour 
- 1 tsp baking powder 
- 1 tsp ground cinnamon 
- ½ tsp ground ginger 
- 1 cup roughly chopped pecans 
- 1/4 cup dates 
- 1 ½ cup grated carrots 
- 1 egg 
- ½ cup olive oil 
- CREAM CHEESE FROSTING 
- 125g cream cheese 
- 1 tsp grated lemon rind 
- 2 cups icing sugar 
MAKES: 6 PREP and COOK: 35 minutes
Method
- Preheat the oven to 180C. Place oats, almond meal, sugar, flour, baking powder, cinnamon, ginger, pecans, and dates in a large mixing bowl. 
- Add carrots, egg, and oil. Mix to combine. 
- Make 12 heaped tablespoons of the cookie dough and place them onto a large baking tray. Bake for 25 minutes or until golden. Allow cooling. 
- To make the cream cheese, please cream cheese, lemon rind and icing sugar into a food processor and blend until smooth. Sandwich the cookies together with the frosting in the middle before serving. - Recipe by: A Better Choice
