Chicken and Qukes® Banh Mi

It’s time for a mini adventure with this Chicken Banh Mi recipe featuring crunchy Qukes® baby cucumbers! 🎉Inspired by Cookie Monster’s love for crispy & crunchy snacks, these sandwiches bring a burst of deliciousness to lunchboxes. 🍞🥒

 Ingredients

  • 4 small Vietnamese rolls

  • ½ cup (150g) Sriracha mayonnaise/plain mayonnaise

  • 1 cup sliced cooked chicken

  • 4 Qukes® baby cucumbers (thinly sliced lengthways)

  • 1 carrot (shredded)

  • 2 green shallots (cut into matchsticks)

  • 1 long fresh red chilli (thinly sliced)

  • Fresh coriander or mint (optional)

Method

  1. Preheat oven to 200°C fan forced. Place the bread rolls on a baking tray. Bake for 5 minutes or until lightly crisp.

  2. Cut the rolls, taking care not to cut right through. Spread the mayonnaise over both sides of the rolls. Fill the rolls with the chicken, Qukes®, carrot, shallots, chilli, and herbs
