Summer Christmas Breakfast Bowl

Before you dive in to all the treats and goodies on Christmas day, how about you start your day with this healthy smoothie bowl to get you going.

This bowl has all the flavours of summer while also being super good for you! Packed full of vitamins and minerals along with healthy fats it is a sure way to give you the energy you will need for all the on goings of Christmas day!

 Ingredients

  • ¾ Cup Kale, leaves only

  • 1 ½ Cup Mango, diced and frozen

  • 3 Med Banana, cut in chunks and frozen

  • 2 Peaches, seed removed

  • ½ Avocado, flesh scooped out

  • 4 Tbsp Coconut butter

  • 2 Tbsp Hemp seeds, or chia seeds

  • 1 Cup Coconut water (or a little more to reach desired consistency)

  • 1 Cup Ice

  • SUGGESTED TOPPINGS:

  • Fresh or frozen berries of choice

  • Sliced banana

  • Hemp seeds

  • Goji berries

  • Coconut flakes

  • Crushed nuts

Method

  • Place all the smoothie bowl ingredients in to a high speed blender or food processor, preferably with a metal blade.

  • Blitz on high speed for 1 minute or until smooth, scrape down sides during process if needed. Add a little extra coconut water if needed to reach desired consistency.

  • Divide among serving bowls and decorate with toppings of choice. Make sure you use bright berries or even goji berries to make this smoothie bowl sing with Christmas cheer!
