Easy roast chicken and citrus tray bake

This succulent double glazed chicken with marmalade and citrus is an easy tray bake that will be loved by guests!

INGREDIENTS

  • 1 tbsp extra virgin olive oil

  • 6 chicken marylands

  • 2 tbsp English breakfast marmalade

  • 1/4 cup fresh citrus juice (Orange, Lemon & Lime)

  • 1/2 cup chicken stock

  • 1 orange, thinly sliced

  • 1/2 lemon, thinly sliced

  • 1/2 lime, thinly sliced

  • Steamed broccolini, to serve

  • Mashed potato, to serve

METHOD

Step 1 - Preheat oven to 200C/180C fan-forced. Heat oil in a large flameproof roasting pan over high heat. Add chicken. Cook for 2 minutes each side or until golden. Transfer to a plate.

Step 2 - Add marmalade, citrus juice and stock to pan. Bring to the boil. Season with salt and pepper. Return chicken to pan and turn to coat. Transfer to oven. Roast for 15 minutes. Increase oven temperature to 220C/200C fan-forced. Add citrus slices and baste with pan juices. Roast for a further 20 to 25 minutes or until chicken is cooked through.

Step 3 - Serve chicken with broccolini and mashed potato.
