Fig, Pear & Goat’s Cheese Salad

Figs are in abundance right now, so we couldn’t resist making this delightful Fig, Pear, Goat’s Cheese and Walnut salad. The sweetness of the fruits paired with the tang of the cheese is a flavourful delight.

Ingredients:

  • 4 figs (cut into quarters)

  • 2 pears (sliced thinly)

  • 70g rocket

  • 50g walnuts

  • 170g goat's cheese, crumbled

  • 1 tsp honey

  • ½ lemon (juice only)

  • 2 tbsp olive oil

  • ½ tsp Dijon mustard

SERVES: 4 (as side) PREP and COOK: 25 Minutes

Method

  1. Preheat your oven to 180C. On a lined baking tray, place your figs, walnuts and goat’s cheese. Grill for 5 mins.

  2. To prepare the dressing, whisk together the lemon juice, honey, oil and mustard. Season with salt and pepper, to taste.

  3. Place your pears and rocket on a serving dish, and top with the grilled ingredients. Drizzle over the dressing and stir, or serve as is.
