French Apple Cake
A deliciously custard soft apple cake delight!!
INGREDIENTS
150g (1 cup) plain flour
1 tsp baking powder
125g butter, at room temperature, chopped
100g (1/2 cup) caster sugar
2 eggs
1 tsp vanilla extract
60ml (1/4 cup) milk
3 large pink lady apples peeled, cut into 2-3cm pieces
Icing sugar, to dust
METHOD
Step 1 -Preheat oven to 180C/160C fan forced. Grease a 21cm springform pan and line the base with baking paper.
Step 2 -Sift the flour and baking powder into a bowl. Use electric beaters to beat the butter and sugar in a separate bowl until pale and creamy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla.
Step 3- Fold the flour mixture and milk (or rum, if you're using it instead of milk) into the butter mixture, then fold through the apple. Transfer to prepared pan and smooth the surface. Bake for 35 to 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Set aside in the pan for 10 minutes, before transferring to a wire rack to cool completely.
Step 4- Serve the cake dusted with icing sugar.
