Healthy Chicken Nachos
It’s nacho night! We can guarantee these Healthy Chicken Nachos will be a hit with the whole family!
Ingredients:
- ¾ pack of corn chips 
- ¾ cup grated cheese 
- 1-2 chicken breasts, cooked and shredded with a fork 
- 2 tomatoes, diced 
- ½ spanish onion, thinly sliced 
- ½ can black beans, drained 
- 1 small can of corn 
- Jalapeno, sliced (optional) 
- Sour cream, to serve 
- Guacamole, to serve 
Serves: 4 | Prep: 15 Minutes
Method
- Pre-heat grill oven. 
- Spread corn chips evenly in an oven proof dish. Sprinkle half of the cheese over the corn chips. 
- Evenly spread remaining ingredients on top; chicken, tomatoes, red onion, black beans and corn. 
- Place under grill for a few minutes or until the cheese is melted. 
- Take out of oven. Top with sliced jalapeno if desired. Serve with sour cream and guacamole.
