Lemon Mug Cake

Ingredients:
- 20 g butter, melted and cooled 
- 1 egg 
- 1 tsp lemon zest + extra to serve 
- ¼ cup plain flour 
- 1 tbsp almond meal 
- 1 tsp stevia/sweetener of your choice 
- ½ tsp baking powder 
- 2 tbsp freshly squeezed lemon juice 
- 2 tbsp milk 
- 1 dollop of cream, to serve 
Serves 1
Method
- In a small bowl, whisk together the butter, egg, and lemon zest until well combined. 
- Next, add the flour, almond meal, stevia, baking powder, milk, and lemon juice, stirring to combine. 
- Transfer mixture to a 250ml microwavable mug or cup. Microwave on high for 2 mins, then set aside for 30 secs to cool slightly. 
- Top with a dollop of cream and extra lemon zest, to serve.
