Mini mixed berry banana breads

These mini Banana Bread are perfect for the lunchbox, picnics or just as an at home snack!!

Ingredients

  • 1 1/2 cups self-raising flour

  • 1/2 cup wholemeal self-raising flour

  • 1/4 tsp bicarbonate of soda

  • 1/2 cup caster sugar

  • 2 eggs

  • 1/3 cup light-flavoured extra virgin olive oil

  • 1/2 cup buttermilk

  • 2 tsp vanilla extract

  • 1 cup mashed banana

  • 1 cup frozen mixed berries

Method

STEP 1 - Preheat oven to 190C/170C fan-forced. Grease an 8-hole (3/4-cup-capacity) mini loaf pan. Line bases and long sides of pan holes with baking paper.

Step 2 - Place flours, bicarb and sugar in a large bowl. Whisk to combine. Make a well. Whisk eggs, oil, buttermilk and vanilla together. Add to flour mixture with banana. Stir until just combined. Fold in 3/4 cup berries. Divide mixture evenly among prepared pan holes. Top with remaining berries.

Step 3 - Bake for 20 to 25 minutes or until golden and just firm to touch. Stand in pan for 5 minutes. Transfer to a wire rack to cool completely. Store in an airtight container for up to 3 days.
