Rainbow Slaw
We’re always told to eat the rainbow so we’ve created this Rainbow Slaw to help you do so easily! 🌈 Made with fresh Cabbage, Capsicum, Carrot and Spring Onion, you’ll be fuelling your body with so much healthy veg!
Ingredients:
- 1/3 wombok, finely shredded 
- ½ red capsicum, thinly sliced 
- ½ yellow capsicum, thinly sliced 
- 1 medium carrot, grated 
- 3 green onions, thinly sliced diagonally + extra to serve 
- ¼ cup tahini 
- 1 tbsp rice wine vinegar 
- ½ cup orange juice 
Method
- Combine wombok, capsicum, carrot, green onion, and sunflower seeds in a large bowl. 
- To make the dressing, whisk together the tahini, vinegar, and orange juice in a small bowl. Season with salt and pepper, to taste. 
- Add the dressing to the slaw mixture, tossing to combine. Serve immediately.
