Roasted Fennel

Ingredients:
- 2 large fennels 
- 3 tbsp olive oil 
- 2 cloves garlic, minced 
- ¾ tsp salt 
- 1 tsp pepper 
- 1 tsp thyme 
- ¼ cup parmesan

Method
- Preheat the oven to 200C. Remove any stalks from the fennel and then cut them in half. Cut each halves into thick slices and arrange them on baking paper. 
- In a bowl combine olive oil and minced garlic and brush it over the sliced fennel. Sprinkle with thyme, salt, and pepper. 
- Roast the fennel for 25 minutes. After 25 minutes sprinkle parmesan over the fennel and return to the oven to bake for another 10 minutes. Serve warm.
