Christmas wedge salad wreath

We love a show-stopping centrepiece at Christmas! And this salad wreath is no exception. Inspired by the flavours of traditional caesar salad, this easy-to-construct side comes complete with crispy bacon, shaved parmesan and a tangy caesar dressing.

INGREDIENTS

  • 2 tbsp extra virgin olive oil

  • 8 shortcut bacon rashers, coarsely chopped

  • 1 tbsp garlic butter

  • 30g (1/2 cup) panko breadcrumbs

  • 4 baby cos lettuce, halved

  • 125g cherry tomatoes

  • Caesar salad dressing, to drizzle

  • Shaved parmesan, to serve

METHOD

Step 1 - Heat the oil in a non-stick frying pan over medium-high heat. Add the bacon and cook, stirring, for 3 minutes or until golden brown. Transfer to a plate lined with paper towel. Add the garlic butter and breadcrumbs to the pan and cook, stirring, for 1-2 minutes or until golden. Transfer to a bowl.

Step 2 - Arrange the lettuce on a serving platter in a wreath shape (use the picture as a guide). Cut half the tomatoes in half and the remaining into quarters and arrange on top of the lettuce. Drizzle over the dressing and sprinkle with the bacon, breadcrumb mixture and parmesan to serve.
