BBQ corn with smoky paprika butter

Want to take your next BBQ up a level then serve up this side dish!!! These juicy corn cobs are just dripping with flavour.

INGREDIENTS

  • 100g butter, softened

  • 1 tbsp smoked paprika

  • 1 tbsp lemon juice

  • 1/4 coarsely chopped flat-leaf parsley

  • 1 cup coarsely chopped coriander

  • 6 corn cobs, husks on

  • 1/3 cup (25g) grated parmesan

METHOD

Step 1 - Combine the butter, paprika, lemon juice, parsley and coriander in a small bowl. Season.

Step 2 - Heat a barbecue grill or chargrill on medium-high. Fold the corn husks back to expose the kernels and tie with kitchen string. Remove the silk. Cook, turning occasionally, for 10 mins or until corn is tender and lightly charred.

Step 3 - Place the corn cobs on a serving platter. Top with the butter mixture and parmesan. Serve immediately.
