Mixed grape galettes

For a dessert with a difference, try these grape galettes, served with a dollop of cream.

INGREDIENTS

  • 50g butter, softened

  • 1/4 cup (55g) brown sugar

  • 1 Egg, lightly whisked

  • 1 tsp vanilla essence

  • 1/2 cup (60g) almond meal

  • 1 tbsp plain flour

  • 2 sheets frozen puff pastry, just thawed

  • 400g green grapes

  • 400g red grapes

  • 2 tbsp brown sugar, extra

  • 1 Egg, lightly whisked

  • Honey, to serve

  • Dollop Cream, to serve

METHOD

Step 1 - Preheat oven to 200°C. Line a baking tray with baking paper.

Step 2 - Beat the butter, sugar, egg and vanilla until smooth. Stir in the almond meal and flour.

Step 3 - Cut each pastry sheet into quarters. Place on prepared tray. Using a sharp knife, score a 1cm border around the edge of each piece of pastry, without cutting all the way through. Top with the almond mixture, keeping it within the border.

Step 4 - Toss combined grapes in extra sugar. Arrange grape mixture on top of the almond mixture. Brush border with egg. Bake for 15 mins or until puffed and golden. Drizzle tarts with honey and serve with dollop cream.
