Sweet Potato Pinwheels

These sweet potato pinwheels make for a great snack for kids lunchboxes! These ones are made with spinach and feta but you could use this recipe as a base and add whatever hidden veggies you desire!

Ingredients

🔸 1 sweet potato, baked until tender – flesh scooped out
🔸 250g frozen spinach, thawed & squeezed
🔸 100g Danish feta cheese, crumbled
🔸 1/2 cup grated parmesan
🔸 1/2 tsp ground nutmeg
🔸 ½ tsp fresh rosemary
🔸 Pinch of salt & pepper
🔸 2 sheets puff pastry
🔸 Egg wash (egg & milk)

Method

  1. Preheat oven to 220 degrees C & Line 2 flat trays.

  2. In a bowl add spinach, sweet potato flesh, parmesan & feta – add nutmeg, rosemary, salt & pepper.

  3. Spread mixture over pastry sheets & roll pastry tightly – cut into pinwheels.

  4. Place onto tray & brush with egg wash & bake for 15 mins or until golden brown.
